"The challenge was to more efficiently use our limited greenhouse space and limited acreage to produce some of the highest quality herbs and vegetables for the finest restaurants in the US. Our company harvests these items the day the order is taken from the chef and then ships the order overnight to their restaurant. Ken took existing order history, harvest yield data and growing schedules and developed an application that allows us to determine where and when to plant a specific product so it matures at the right time to meet historical demand. We’ve been able to reduce waste and ensure that the chef’s have the products they want when they need it."
